Marinating the meat
Mix Svanetian salt and adjika with vegetable oil. Marinate the beef tenderloin for at least 30–40 minutes.

Preparing the meat for grilling
Slice the marinated tenderloin thinly and skewer the pieces.

Cooking the meat
Grill over open coals until fully cooked.

Preparing the pepper

Drizzle the pepper with oil and roast in the oven at 180°C for 4–5 minutes. Sprinkle with Svan salt once done.

Preparing the sauce

Melt the butter in a saucepan, add finely grated garlic, salt, and lemon juice. Simmer on low heat until thickened. Finish with finely chopped cilantro.
