My name is Ksenia Saparbekova, and I’m the head chef at Marcello restaurant. Our concept is built on a deep love for the craft. Every dish is made with heart — it may sound cliché, but it’s essential. A chef who truly loves their work puts their whole soul into it, carefully choosing each ingredient and feeling proud when a guest calls the dish divine.
My culinary journey began in childhood. My grandmother was the first to support my kitchen experiments, and her encouragement helped shape who I am today.
I now work with European cuisine, which offers endless room for creativity. The rich culinary heritage of Europe inspires me to combine ingredients in ways that create entirely new flavors.
I pay close attention to water quality — it influences the taste of every dish. Good water enhances flavor, removes unwanted aftertastes, and brings out purity. That’s why I choose Borjomi: its natural mineral composition helps unlock the full potential of each ingredient and perfect the dish.
