Margo’s brand chef is Tina Vashakidze, as restless as Margo itself, who creates dishes with character. Every dish seems to tell a story about Margot's character and life—interesting, cheerful, and emotional: refined in the French style in the morning, and in the evening, vibrant and seasoned with colored peppers.
Margo’s cuisine is a fusion of Georgian and European dishes. Every dish is as elegant as Margo itself. At first glance, the chicken pâté might resemble a French dessert, while the Megrelian elarji is adorned with shrimp, like pearls.
The Margo Sololaki restaurant opened in November; starting in the spring, it will feature an outdoor pool and a café surrounded by the Sololaki Mountains.
