Hello, I am Salome Goglidze, clinical nutritionist. I chose my profession while studying at the medical university and I am currently continuing my studies in the graduate course of the clinical nutritionology master’s program at the University of Aberdeen in Scotland.

I also studied at Monash University in Australia, after which I started working as a clinical counselor with people who have various discomforts/disorders caused by eating and need to improve their eating habits. My second job is at the Champions Academy, where I help people involved in sports to improve their nutrition and, accordingly, achieve the desired results. A balanced, plant-based diet and a healthy lifestyle have always been a priority for me, as this helped me to stay physically active and motivated to achieve my goals. Any recipe or dish that I prepare myself or share with my subscribers is rich in plant products. An abundance of plant products is a necessary component of a balanced diet. Even today, we offer a very simple, balanced and, what is most important, a dish rich in vegetable products – “Pasta covered with vegetables”.

The dish is also unusual for children who do not eat vegetables in the usual way.

1 1 tablespoon olive oil
1 1 piece red onion, chopped
1 1 piece carrot, washed, peeled and cut;
1 1 piece red pepper, washed and chopped
1 1 piece stalk of celery, washed and chopped
3 3 piece crushed garlic
250 250 ml. can of crushed tomatoes
1/2 1/2 teaspoon oregano
salt to taste
360 360 gr. spaghetti (dry weight)
Garnish with fresh sweet basil and parmesan

Cooking method: heat a pan on medium heat, pour oil, place chopped onion, celery, carrot and red pepper. Cook the vegetables for 5 minutes until soft. Stir periodically.

Boil water, add salt and cook spaghetti according to package directions. Meanwhile, add tomatoes, garlic, salt and oregano to the vegetables, saute a little.

Add 180 ml to the vegetables. Spaghetti soup. Transfer the mass to a blender and blend. Place the blended mass again on the pan and boil. Add the drained spaghetti and mix well.

Top with parmesan and live fresh sweet basil. For 3-4 servings.
