Zucchini is a very wholesome vegetable. It is easily digestible, contains carbohydrates, proteins, carotene ascorbic acid, B vitamins. Due to a small amount of fibre, it is used in diets as a low-calorie food - only 20 kcal per 100 g.

Wash zucchini and slice it lengthwise into thin strips of 3 mm. Pour water in a big pot, add salt and once it boils throw zucchini strips in it and cook for 2 minutes. Then drain and cool it.
Warm a medium-size pan on a medium fire; add oil and sauté mince in it. Stir with a wooden spoon so that it does not come apart. Once it changes colour and seeps out juice, add minced onions and in 3 minutes add grated carrots and tomato paste. Don't stop stirring. Check if the mince is cooked and remove it from the heat.
Melt butter in a deep pan and add flour, then milk and keep stirring. The mixture will slowly thicken. In the end add ground nutmeg and white pepper.
Grease a baking pan and put in zucchini first, followed by a layer of cooked mince, white sauce and grated sulguni. Repeat this until the pan is full. Preheat an oven to 175 degrees and bake it for 7-10 minutes.
