This is very simple and tasty recipe. You can enjoy this soup both warm or cold - I prefer cold.
It's really important to use fresh or frozen peas.

Take a saucepan, finely chop onion, and saute it in butter. When onion is cooked, add peas. Saute peas no more than 2 minutes, it should stay green, add 250 ml. of already cooked unsalted vegetable broth (hot).
Now it's time to whisk our soup in blender. Add mint leafs and parsley. Whisk the mixture and pour remaining broth.

Add salt to taste. Soup should be smooth and homogeneous.
You can keep it a fridge for 2-3 days.
How To Serve
Mix sour cream with 20-30 ml. of water.
Sprinkle soup with finely chopped green onions.
