Peking Duck

The story of our signature Peking duck began more than 20 years ago, when our chef, Karma Tashi Sherpa, trained under one of the greatest masters of traditional Chinese cuisine. Four years of painstaking study of the art of blending spices and the subtleties of flavor laid the foundation for our signature recipe. Today, we use more than 17 types of carefully selected spices in the preparation of our duck, creating a unique flavor that combines respect for tradition with our own distinctive touch. A golden crust and juicy meat inside are the hallmarks of our duck.

Trim the duck, remove any excess fat, and rinse it. Then scald the skin with boiling water to tighten it and make it smooth. After that, rub it thoroughly with a mixture of salt, spices, and a small amount of soy sauce mixed with rice wine.

Brush the skin with honey or syrup. Then roast the duck at 180°C and cook over moderate heat until done and a crispy crust forms (30–45 minutes). Cut the cooked duck into large pieces.

Cut the meat into serving-sized slices of uniform thickness. It’s important to make sure that each slice retains some of the crispy, glazed crust.

Arrange the dish for serving. Carefully transfer the sliced meat to a serving platter, arranging it in an even cascade for an attractive, restaurant-style presentation.

Serve the dish with warmed wheat crepes, hoisin sauce, julienned cucumber, and green onions. Guests assemble their own mini-rolls, combining juicy meat, a crispy crust, spicy sauce, and fresh vegetables.
