Fry the lamb until lightly browned. Transfer to a ceramic pot.

Add vegetables, garlic, herbs, oil, wine, broth, and spices. Roast in a stone oven over charcoal for 1-1.5 hours (depending on the cut of meat).

After baking, remove the meat and vegetables and place them in a clay pot. Top with tomatoes, roasted Dungan peppers, and olives..

Cover with unleavened dough, brush with the glaze, and sprinkle with sesame seeds. Bake for 5–10 minutes until golden brown.

Before serving, cut the dough and add feta, salsa, fresh herbs, olive oil, and a little of your own broth. Gently mix everything — and serve!
