My name is Ruslan Shamsudinov, and I’m the head chef at AIZA Terrace and Local Coffee.
My journey in the kitchen didn’t begin with the ambition to become a chef, but with a simple curiosity: to understand how flavor is created from everyday ingredients. Over time, it stopped being just a job and became my life’s work, where every step matters—from selecting ingredients to serving the dish itself.
I started in entry-level positions and worked my way through every stage: from prep work to front-of-house service. This gave me what matters most—an inside understanding of the processes and a deep respect for the ingredients. The kitchen taught me discipline, quick thinking, and accountability for the final result.
My professional journey has taken me beyond the borders of a single country. Midway through my career, I completed an internship in Italy, where I learned the art of pastry-making through hands-on experience. This experience gave me a solid foundation: attention to detail, precision, and an understanding of flavor balance that goes far beyond any single culinary style.
Upon my return, I continued to develop my skills in Almaty, working at the city’s top restaurants. I was fortunate to learn from experienced and demanding chefs, each of whom influenced my approach to cooking and helped shape my professional vision.
Now, in my work, I emphasize flavor and balance. It’s important to me that a dish isn’t overloaded, and that each ingredient contributes to the overall result. I don’t chase complexity for its own sake—for me, the purity of flavor and a clear concept on the plate are more valuable.
My style is a combination of classic techniques and a modern approach. I love working with textures and aromas and finding a balance between richness and lightness. For me, cooking is a way to communicate with guests through food.
