My name is Ruslan Abdullayev, and I am the brand chef at SHATÉ restaurant in Astana. My journey in gastronomy began 20 years ago in the kitchens of my hometown, Kyzylorda, and continued with landmark projects in the capital. Over this time, I have developed my own approach to working with a team and learned how to achieve impeccable product quality.
Working for over 10 years at events attended by top government officials served as an excellent professional training ground for me. This level of work demands absolute discipline, precision, and complete trust. In addition, my vision was greatly influenced by my collaboration with world-class chefs, including Michelin-starred chefs Mauro Colagreco and Michel Lens. Thanks to them, I adopted cutting-edge approaches to the product and the aesthetics of presentation.
My professional foundation is European cuisine, which I have long complemented with local touches. But it was at SHATÉ that I found my place and clearly understood how I want to develop my culinary style. Today, my main focus is contemporary Kazakh cuisine. I’m convinced that our national cuisine doesn’t need to be reinvented. It’s important to reveal its true nature through respect for history, preserving its authentic flavors while giving them a contemporary twist.
My guiding principle is to keep it simple. I want to serve guests delicious and approachable food that makes them want to come back. At the heart of it all are refined techniques, balance, and uncompromising quality. Every ingredient on the plate is no accident, but a deliberate element that contributes to the dish’s texture, aroma, and overall harmony.
It is this philosophy that defines SHATÉ’s cuisine. Here, Kazakh gastronomy speaks a modern language that is understood by both the country’s residents and an international audience. Every dish is more than just a recipe. It is a story, an emotion, and a respect for heritage, conveyed through my unique perspective.
