The Secret of Perfect Plov: Measure, Heat, and Attention

Chef Sardor Raimov has been cooking plov for 19 years — and the main secret he shares sounds surprisingly simple: keep your measure.
The most common mistake is adding too much water. Excess water prevents the rice from absorbing the zirvak — that rich broth of meat, carrots, and spices that is the very soul of plov. The rice must be fluffy, not mushy: each grain separate, yet full of flavor.

The second point is the oil. It must be well heated before the meat goes in. Oil that is not hot enough will not give the right crust, and the flavor of the zirvak will come out flat. The meat should fry, not stew.
And finally — cook with attention. Plov does not tolerate rush or indifference. It is care at every stage that transforms a set of ingredients into a dish with a soul.
