How to cook the perfect chicken

We always start frying the chicken from the skin side, on medium heat. 
If cooking in a pan, it is better to use a press, weight to give the chicken more crunch. 
We transfer the chicken from the fire to the oven, where we complete its preparation. In this way, the meat will get more juiciness, because it will release its own fat, which will help in the frying process.
