2 2 beetroots
100 100 gr. rucola or latucce
50 50 gr. dates
30 30 gr. walnuts
50 50 gr. goat cheese
30 30 ml. olive oil
5 5 gr. mustard
20 20 ml. vinegar
15 15 gr. honey
Salt to taste

Wash beetroots. Wrap them in a foil and bake on a low temperature (150C) for 3-4 hours.

Make a dressing: place in a bowl vinegar, mustard, and honey. Whisk them. Start adding olive oil, continue whisking.

Peel beetroots. Cut them. Place rucola on a plate. Add beetroot and dates. Pour with the dressing and mix gently.

How To Serve

Top with walnuts and cheese. Enjoy!
