Bake carrot and apple at 180 degrees for 15 minutes.
Meanwhile, saute onions and garlic, add wine and mint.
Place baked carrot and apple to the saucepan and whisk with the blender. Add greenery while whisking. Add a bit of vegetable broth or water.
