ingredients
10 10 mussels (on a green half-shell)
30 30 gr. butter
30 30 gr. breadcrumbs
10 10 gr. garlic
100 100 ml. cream
50 50 gr. tarragon
10 10 gr. spring onions
10 10 gr. parsley
10 10 gr. coriander
50 50 gr. lemon

Remove seaweed from the shells of mussels. If you ook carefully, you might find seaweed inside as well. Remove mussels from the shell temporarily, until you put in a filling.

For preparing the filling you will need butter, breadcrumbs, garlic, salt and a little bit of lemon zest for a flavour. Mix everything together and distribute the filling in the shells. Then return mussels back and put them in a preheated oven on 150 degrees and check it frequently. When the butter melts and starts boiling, you can already sprinkle Parmesan and put them back in the oven for 1 minute, or until Parmesan melts (This also depends on your preferences). Entire baking process takes 10-12 minutes.

Simultaneously simmer a cream, add a single grated garlic clove and all the herbs and remove from the stove. Blend it well to recrive the mixture of a beautiful bright green colour. Add a pinch of salt and it’s ready. (As for the ingredients, you are free to choose them freely, adding your favorite herbs and exclude the ones that you do not like).

How To Serve

Get a large plate with a darker colour for serving. Put rock salt on it, place mussels according to your preferred arrangement and drizzle the sauce over the mussels, or serve it separately.

Useful Tips

You need green, relatively large mussels on half-shells for preparing this dish.
