Pumpkin muffins

It’s getting cold and it is high time to prepare delicious pumpkin desserts and dishes.

You will find many interesting recipes with pumpkin on our website. This time we added muffins to the list of autumn dishes. Pumpkin muffins, which are very easy to prepare, are healthy and wholesome sweets not only for children, but for adults as well.


To prepare it you will need:

  • 200 g pumpkin pulp
  • 225 g flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 150 g sugar (preferably brown)
  • 2 eggs
  • 100 g oil (sunflower or corn oil)  

First we cook pumpkin on a steam bath, cool it and remove the pulp, weigh it.

Preheat oven to 190 degrees.

Mix flour, baking powder and cinnamon.

Beat the eggs and sugar with a mixer, add pumpkin pulp mashed with a fork and mix well. Add dry ingredients and stir. Finally add the oil and mix well until a homogeneous mass is obtained. If you wish, you can add ½ a cup of chopped walnut, it goes well with it.

Put the dough into muffin pans. You will get 12 pieces. If you do not have special paper molds, butter the pan and flour lightly so that it does not stick.

Bake for 20 minutes or check if it is baked by inserting a small wooden stick in the muffin, which should be dry when removed.

Keep hermetically sealed for up to 3 days.
