Remove mould from the marinated cottage cheese and chop it in small pieces, or grate it. Heat a pan and put ghee in it. When it becomes warmer, add marinated cottage cheese and lower the temperature. The cottage cheese must start melting, but it should not entirely melt as few small pieces must remain untouched. When it is ready, enjoy with bread. People in Pshavi wash it down with some fruit vodka.

How To Serve

Serving “Khachoerbo” is a little bit complicated, as it cools very fast. If you are cooking it in a family environment it would be better to serve it in a nice cast iron pot. If you decide to serve it individually, preheat dishes in which you plan to place it, so that the food keeps its temperature.
