Duck with sweet Tkemali
ingredients
300 300 gr. duck fillet
100 100 gr. onion
100 100 gr. oil
200 200 gr. pear
500 500 ml. wine
50 50 gr. honey
50 50 gr. butter
50 50 gr. almonds
10 10 gr. orange zest
10 10 gr. lemon zest
100 100 gr. tkemali
50 50 gr. parsley
30 30 gr. coriander

Cook and discard bones from tkemali, mix with herbs and honey.

Boil pears in wine.

Duck fillet, salt, pepper to taste. Fry on both sides in a frying pan. Then put in the oven for 15 minutes at 200 degrees. Sprinkle with onion to make the meat taste. Slice the baked duck into desired slices.

How To Serve

Garnish duck meat with pears and tkemali as well as zest of almonds, orange and lemon.
