Quail with plum sauce

400 400 gr. plum
30 30 gr. squaw mint
25 25 gr. basil
1 1 green pepper
5 5 garlic cloves
1 1 teaspoon Svanetian salt
120 120 ml. vegetable oil
1 1 teaspoon tablespoon dried coriander corns

Wash plums. Remove seeds and place in a saucepan. Wrap coriander corns in a gauze and place in the saucepan along with plums. Pour with water and simmer for 15 minutes. Remove seeds.

Wash greens. Finely chop pepper and coriander. Remove leaves from squid mint and basil. Whisk this ingredients along with cooked plums. Sauce is ready.

Sprinkle quails with Svanetian salt and fry on a pan from both sides.

Serve quails with sauce and micro herbs.
