ingredients
400 400 gr. carrot
2 2 piece onions
1 1 piece clove garlic
200 200 ml. coconut milk
1 1 piece red bell pepper
20 20 gr. mint
250 250 ml. vegetable broth

Sauté carrot along with bell peppers, onion and garlic. Add broth and boil.

When vegetables will be cooked, pour everything into a blender and whisk along with mint, coconut milk, salt and pepper.

Serve with mint leaf.
