Baked pumpkin salad
gr. green apples
Red pepper flakes to taste
Dried coriander to taste
Saffron to taste
Salt to taste
Finely chop onions and marinate in salt and 30 ml. of vinegar.
Set aside for a while.
Remove skin from pumpkin.
Cut it, wrap in a foil and bake at 200 degrees for 20 minutes.
Whisk in a blender walnuts, seasonings, lemon zest and garlic.
How To Serve
There are two ways of serving this salad.
The first one is to mix all the ingredients and serve as Georgian traditional pkhali.
The second one is to place on a plate pumpkin, walnuts mixture, apples, marinated onions and rucola on top. Pour with a bit of vinegar.
