Khitsitsi is fried pork fat. My grandmother used to cook it, so I decided to share the recipe.

Cut fat into small cubes and fry. Pour the oil into separate bowl.
Wash and cut potatoes, don't peel them.Cut carrot and broccoli. Mix pork fat with Svanetian salt. Place vegetables on a baking tray, pour with fat, preheat oven to 180 degrees and bake for 30 minutes.
Wash, peel and cut kiwi into small pieces. Put in a saucepan, pour with water and simmer for 5 minutes. Don't pour away water after cooking.
Wash and finely chop parsley. Place in a blander with kiwi, garlic, dried mint and Svanetian salt. Whisk together add kiwi water, if you think that dressing is to thick.
Cut lavash into small pieces. Pour with olive oil and bake at 180 degrees for 5 minutes.
How To Serve
Place dressing into separate bowl. Put on a plate vegetables and lavash, sprinkle with fried pork fat and pomegranate seeds.
