First, prepare the stuffing. Scroll pork, add finely chopped onion, garlic, coriander, red pepper, breadcrumbs, salt, and pepper. Add finely sliced apples. In a frying pan, pour the brandy, 1 tablespoon of water, put the dried fruit and boil. Once the water evaporates, remove, chop and add to the stuffing.

Fill the turkey with stuffing, put on a deep baking tray together with celery, leek, lemon, and garlic. Pour 500 ml. of water, sprinkle the turkey with salt. After, cover the tray with foil and place in oven at 210 degrees for 40 minutes.

After that, reduce the temperature to 170 degrees and leave for 2 hours. The last 30 minutes, remove the foil and remove the vegetables. Add 100 gr. of butter, 30 ml. of vegetable oil, rosemary and garlic.

Prepare the sauce: boil the lemon zest and juice of orange, cinnamon, and ginger. Boil, allow half the liquid evaporate, add 30 grams of sugar and berries. Continue to simmer until the sauce becomes thick. You can whip in a blender or leave whole.

Garnish: Clean carrot, cut and put in the pan, where a prior roasted bacon, add the butter and cook over low heat. After 10 minutes, add the sugar and let it dissolve and simmer for another 7 minutes.
