One lemon zest

Whisk eggs and sugar. Mix milk and oil. Pour into the eggs and continue whisking.
Mix flour with salt, cinnamon, and baking powder. Sift into the egg-oil mixture. Add lemon zest.

Whisk with mixer at low speed for one minute. Then, increase the speed and whisk for two more minutes. Cover with plastic and store in fridge for at least one hour.
Preheat the oven to 250 degrees.

Fill the molds up to 2/3 of the dough, sprinkle with sugar and bake in the oven, immediately reduce the temperature to 220C and leave only the display below.
