Beef tongue with almond sauce

1 1 piece beef tongue
60 60 gr. onion
120 120 gr. carrot
50 50 gr. butter
20 20 ml. vegetable oil
50 50 gr. almond
40 40 gr. lemon
2 2 piece bay leaves
5 5 piece black pepper peas
30 30 ml. cognac or brandy
5 5 gr. sesame seeds
150 150 ml. beef stock
50 50 gr. raisins
2 2 piece of garlic

Wash the tongue. Cook in salted water with bay leaves and black pepper. After - put under the cold water.

Chop onion, garlic, and carrot. Saute in butter. After, add chopped almonds, lemon zest, and raisins.

Pour with brandy. Then, add beef stock and lemon juice. The sauce should not be very liquid. Season with red pepper and salt.

Clean the tongue and cut into thin slices.

How To Serve

Put slices on a plate, pour with sauce and sprinkle with sesame seeds.
