Chocolate has always had a special place in Audrey Hepburn’s kitchen. Despite the dancer’s orderliness, there was always a box of chocolates in the house, at an accessible place. Despite protests from her chef, Joanna, Audrey used to make the flourless chocolate cake herself. It was the family’s favorite dessert, an unchangeable sweet for birthdays and holidays.
Follow the recipe and prepare the softest chocolate cake.
You will need:
Preheat oven to 200 degrees.
Insert the baking paper into a 20 cm diameter baking mold.
Put the chocolate with the milk on the steam bath, add the butter cubes and stir until you get a homogeneous mass.
Separate egg white and yolk, add the yolks to the chocolate mass and stir. Whisk the egg white with the sugar in a mixer until medium thick.
Gradually mix egg whites with the chocolate mass. Place the dough into a baking mold and bake for 30 minutes. Turn off the oven, open the door and leave the cake in the oven for another 10 minutes.
Cool and sprinkle with powdered sugar, serve with vanilla ice cream or whipped cream.
