Clafouti

Clafouti is a light, summer dessert from Limousin region, in southwestern France. Clafouti is a bake of whole cherries and dough made of crepe, served in a ceramic or glass baking dish at a table. Traditionally, kernels are not removed from cherries, so as the juice and taste are maintained in the fruit, and also  kernels give special aroma and flavor to the dessert. This simple, family dessert will surely please you, with its simplicity of preparation and unique taste.

 

You will need:                                                                       

400 - 500 g cherries

4 eggs

100 g sugar

1 tablespoon vanilla sugar

85 g flour

Pinch of salt

500 g milk

1 tbsp. alcohol as desired (cherry liqueur or rum)

10 g butter for mold

Powdered sugar

Preheat oven to 200 degrees.

Beat eggs and sugar until fluffy mass is obtained.

Slowly add the flour and stir continuously. Finally pour in the milk and alcohol, mix well. You will obtain a mass of pancake dough-like consistency.

Apply butter to glass or ceramic mold, sprinkle with 1 tbsp. sugar. Spread cherries, carefully pour the dough. Bake for 30-40 minutes on low heat for another 10 minutes on high-low modes until the dough gets firm in the center of the mold and the surface is golden brown. Cool the cake slightly and sprinkle with powdered sugar. Serve warm or cold.
