Honey is super healthy, super delicious and aromatic product, distinguished for its high nutrition and health benefits. Honey consists of 75-80% of carbohydrates - glucose, fructose, and sucrose. They produce energy, that is necessary for human body functioning. Honey ferments stimulate metabolism, digestion, improves heart muscle performance, secretion of stomach juice, etc. Honey has calming and painkilling effects, but it's not recommended for people suffering from allergies. Diabetics should consume honey only after consulting with a doctor.  

Color and taste of honey depend on plants, ground, type of bee, etc. In the places where plants are treated with pesticides, various toxic substances get concentrated in honey and the product loses its quality. Newly squeezed honey looks like a liquid; however, after some time it gets crystallized and signals for the good quality and maturity of the product. Honey made of certain plants (e.g. white linden, chestnut) consists of a large amount of fructose and it may not crystallize at all or take it really slow. As a rule, well-matured honey never spoils.  

Honey is a precious product and always enjoys high consumer demand. Because of this it's been frequently falsified. To avoid this, please accept few of our advices.

Always try to purchase honey directly from a bee-master; when pouring down from the spoon, natural honey will create 10-12 cm long uninterrupted flow. It must be transparent; honey bought in summer should be thin in consistency, while in autumn and winter – it should be crystallized (except from those few types, mentioned above). A weight of 1-liter honey must be no less than 1,5-1,4 liters. It shouldn't have any sour taste or foam; if a drop of vinegar in honey provokes bubbling, it means it has added some chalk for thickening. Ideal place for keeping honey is a cool, dark place in a glass jar.
