Basturma has several recipes all around the world, but especially in Caucasus and Middle East where it is most loved. Genuinely original Basturma recipe combines tastes of honey and mustard and requires following ingredients:
1 tablespoon of mustard
1 tablespoon of honey
1 teaspoon of black pepper
1 tablespoon of orange zest
Basturma should be kept in a fridge for overnight, which ensures secretion of juices from all the ingredients and their mixture into each other. This type of Basturma needs no pre-cooking as it can be made simultaneously together with roasting the meat. The ingredients must be thoroughly combined. Basturma tastes best when made out of mutton.
