There is no better place for spending autumn than in Kakheti as every single autumn day is a celebration in there. Picking and pressing grapes, making Badagi...  all these rituals follow each other with a cheerful company of a delicious Kakhetian wine.

If you have seen the process of making Badagi you can easily imitate it at home. You only have to follow the rules.

Fill the pot with a newly squeezed grapes juice and set on a low fire.

Every time a scum appears on the simmering juice surface, you need to remove it diligently. Then let it cool down. Later move the juice in another pot and leave it for a day. Sieve the consistency in the next morning and voila - your Badagi is ready.

Now you can start making Churchkela....
