Lemon pickles

Simplified recipe of traditional Indian lemon salting, cooking which takes 1 day instead of 20.


300 gr. of lemon

2 tbsp. lemon juice

1/4 turmeric

1 ½ cup of powdered sugar

2 tsp. red pepper


Cook the lemon to the extent that it can be peeled. Squeeze it and cool it. Cut it into quarters. Pour the lemon juice, sprinkle with salt and turmeric. Leave it for about 10 minutes. After that, gradually add the powdered sugar and constantly stir. When the sugar is completely dissolved, add the red pepper and mix again. Transfer to sterilized cans and keep one day in a dark place.
