Zucchini soup

We think our loyal readers already noticed that we adore zucchini. Today, we are going to cook very tasty soup. 


2 medium sized zucchini

1/2 onion

3 cloves garlic

100 ml. chicken or vegetable broth

2 tablespoon sour cream

50 gr. grated parmesan

3 tbsp. olive oil

Salt and pepper - to taste


Finely chop onion and garlic. Slice zucchini. Saute vegetables. When onions will become transparent and zucchinies soft, add broth and simmer for 10 minutes. Whisk soup with hand blender. Sprinkle with salt and pepper. 

Serve with sour cream and parmesan.
