Cold beetroot soup

This soup was created after a rough Friday night. It will help you cure a hangover, after "Borjomi", of course.  


3 beetroots 

2 cucumbers

50 gr. green onions 

50 gr. dill

500 ml. kefir 

Juice of half lemon 

1 tbsp. sugar 

Salt and pepper - to taste 

First of all, peel and boil the beetroot. Leave water, this will be the base of soup. Grate beetroot. Cut cucumber into small pieces. Finely chop green onions and dill. Mix these ingredients together in a deep bowl. Add kefir, beetroot water, and lemon juice.  Season with salt, pepper, and sugar. 

Serve with boiled egg.
